- 2 pounds Yukon Gold potatoes, peeled and cut into cubes
- 3 cloves garlic, freshly minced
- 1/4 cup cilantro, chopped
- 1 teaspoon crushed red pepper flakes (adjust to taste)
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Peel and cut the potatoes into even-sized cubes.
- Boil the cubed potatoes in a large pot of salted water until tender but firm, about 10 minutes. Drain and let cool.
- Mix in a bowl the minced garlic, chopped cilantro, red pepper flakes, lemon juice, olive oil, salt, and pepper.
- Coat the cooled potato cubes in the flavorful dressing, ensuring all pieces are coated.
- Fry in a skillet over medium heat until golden brown and crispy, about 8-10 minutes, turning occasionally. Serve hot.

For a healthier option, consider air frying or roasting the potatoes in the oven instead of frying.
