- 7 oz dark chocolate (70% cocoa), finely chopped
- 3.5 fl oz heavy cream
- 0.88 oz unsalted butter, at room temperature
- 1 tsp vanilla extract
- 4.2 oz fresh strawberries, hulled and chopped
- 2 tsp granulated sugar
- 1 tsp fresh lemon juice
- 3.5 oz dark chocolate, melted for dipping
- 2 tbsp freeze-dried strawberry powder
- Edible gold dust for decoration
Instructions
- Prepare Strawberry Purée: In a small saucepan, combine chopped strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, for 5-7 minutes until thickened. Blend to a smooth consistency and let cool.
- Make Chocolate Ganache: Heat heavy cream in a small saucepan until simmering, then pour over finely chopped dark chocolate in a heatproof bowl. Allow to stand for 1 minute, then stir until smooth. Add butter and vanilla extract, mixing until combined.
- Combine Ganache and Strawberry: Stir 2-3 tablespoons of cooled strawberry purée into the ganache until blended. Cool to room temperature, then refrigerate for at least 2 hours until firm.
- Shape Truffles: Use a melon baller to portion the ganache into 18 equal balls. Roll between palms to smooth. Refrigerate on a parchment-lined sheet for 15 minutes.
- Coat and Decorate: Dip each truffle in melted dark chocolate, letting the excess drip off. Sprinkle with freeze-dried strawberry powder and dust with edible gold before the chocolate sets.
- Set and Store: Allow truffles to set completely at room temperature or refrigerate briefly. Store in an airtight container in the fridge.
