- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)
- To taste Salt & Pepper
- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo
- 1 cup Guacamole
- 1/2 cup Sour Cream (Or Greek yogurt)
- To taste Optional Toppings (Crumbled cheese, lime wedges, and crispy tortilla chips)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare your sweet potatoes: Peel them and cut them into even cubes.
- Toss them in a bowl with olive oil, smoked paprika, salt, and pepper until well coated.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, flipping halfway through.
- Heat a non-stick skillet over medium heat and add your ground beef.
- Cook until browned, about 5-7 minutes.
- Sprinkle in the taco seasoning and a splash of water, then stir well and let it simmer for another 2-3 minutes.
- Assemble your taco bowl starting with roasted sweet potatoes, then layer on the ground beef, pico de gallo, guacamole, and sour cream.
- Finish with optional toppings as desired.
