Description

A comforting bowl filled with roasted sweet potatoes, seasoned ground beef, and colorful toppings, creating a delightful and nourishing meal.


Ingredients

  • 4 cups Sweet Potatoes (Cubed)
  • 2 tablespoons Olive Oil (Or avocado oil)
  • 1 teaspoon Smoked Paprika (Or regular paprika)
  • To taste Salt & Pepper
  • 1 pound Ground Beef (Or turkey, chicken, or black beans)
  • 2 tablespoons Taco Seasoning (Homemade or store-bought)
  • 1 cup Pico de Gallo
  • 1 cup Guacamole
  • 1/2 cup Sour Cream (Or Greek yogurt)
  • To taste Optional Toppings (Crumbled cheese, lime wedges, and crispy tortilla chips)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your sweet potatoes: Peel them and cut them into even cubes.
  3. Toss them in a bowl with olive oil, smoked paprika, salt, and pepper until well coated.
  4. Spread the sweet potatoes on a baking sheet in a single layer.
  5. Roast in the oven for about 25-30 minutes, flipping halfway through.
  6. Heat a non-stick skillet over medium heat and add your ground beef.
  7. Cook until browned, about 5-7 minutes.
  8. Sprinkle in the taco seasoning and a splash of water, then stir well and let it simmer for another 2-3 minutes.
  9. Assemble your taco bowl starting with roasted sweet potatoes, then layer on the ground beef, pico de gallo, guacamole, and sour cream.
  10. Finish with optional toppings as desired.
