Instructions
- Prepare the Pico de Gallo: In a small bowl, mix the diced tomato, jalapeño, lime juice, salt, and pepper. Let the mixture sit for at least 10 minutes.
- Cook the Bacon and Sausage: In a large skillet over medium heat, lay down the bacon slices. Cook until crispy, then transfer to a paper towel. In the same skillet, add the ground pork sausage and cook until browned (about 5-7 minutes).
- Toast the Bagels: Slice and toast the onion bagels until golden brown. Spread softened cowboy butter over each toasted half.
- Assemble the Bagels: Layer 2 slices of bacon on each bagel, spoon the sausage, add cheddar cheese, place a fried egg, and finish with pico de gallo.
